How do you make sushi rice?

Ingredients you will need to make sushi rice:

sugar rice wine vinegar
medium grain rice saltrice cooker (preferred, but optional)

Step 1
1 1/2 cups rice to 2 cups water (yields 4 cups cooked rice or about eight sushi rolls)

The most important step that many people skip over is to rinse the rice. Rinse the rice with cold water, repeat the process until the water is clear (can take 3 – 5 minutes). The reason we want to rinse the rice is because the end product will have a better texture and taste.

Once your rice is rinsed, you can put it in the rice cooker with water and let it cook.

Step 2

We are going to take a small sauce pan and add rice wine vinegar(3/4 cup), sugar(1tblsp) and salt(1 tesp), then heat the ingredients up until everything is melted in with the rice wine vinegar. Make sure to heat the sauce pan just enough for the ingredients to mix together, do not allow the mixture to boil.

Step 3

After the sushi rice is cooked, add the rice wine vinegar mixture little by little in a bowl with the cooked rice and gently fold together. Note, while adding the rice wine vinegar to the rice, to fan the rice (like you use a fan on your face on a hot day), this will help cool the rice wine vinegar mixture and also give the rice that shiny effect.

Step 4

Now the rice is ready to be used for sushi. You can also store the rice if you want to use it later.
How to store sushi rice

It is really important that the rice is room temperature, and that you cover the rice with a damp cloth. The reason for placing a damp cloth over the rice is to prevent it from becoming dry and hard.
How do you make sushi?

Now that you have your rice and salmon slices ready, place a small amount(tip of a knife amount) of wasabi onto the salmon. While holding the slice of salmon in your right hand(wasabi side up, place a palm full of the rice you made on top of the salmon. Now you can mold the nigiri-zushi with your hands, squeezing gently to keep all the ingredients together.
